Fresh peas  –  100gm
Monkfish tail   –   1  (dice chunkily and fried)
mix fish fillet –   500gm ( including cod, haddock)
Egg yolk          –   3
Scallops        –   12 
Prawns        –  200 gm (peeled)
Onion         –    1 (finely chopped)
Celery        –  2 sticks  (finely chopped)
leeks         –  2 (finely sliced)
all-purpose flour     –   50 gm
butter            –             50 gm
Fish stock        –    400 ml
white wine dry    –   100 ml
double cream      –    150 ml
parsley                –     2 sticks finely chopped
salt                  –    according to taste
Pepper             –  according to taste
lemon juice      –   1 whole lemon
Rosemerry       –   1 spring
Cheeze          –   175 gm
Hardboil eggs    – 3 (chopped)

For topping

Potato (mashed)    –   1 kg
milk                         –   100 ml
Butter                      –   50 gm
Nutmeg powder       –   A pinch
Salt and pepper       –   According to taste

Instructions

Step 1: To make toppings Put the 1 kg potato in the pan and cover it with cold salty water, bring it to a boil, and cook until it becomes very soft it needs a maximum of 15 mins. Drain and leave them to extract excess water.

Step 2: Then mash the potato with a masher blend with half the butter, cream, egg yolk, and a pinch of salt and pepper, and put it on one side.

Step 3:  To make fish pie take a large saucepan and put the milk and rosemary, onion into it with salmon fillets, cod, and haddock, let them boil, add prawns when at last, and simmer on moderate heat for 5 mins.

Step 4: Remove the poached haddock from the milk and with the help of a spoon keep it aside, when it gets cool enough to handle then remove the flake and skin chunkily. Repeat this poaching process with salmon cod and prawns. Once you poached all these fish then strain the milk and put them aside

Step 5: Now heat a frying pan on high heat, add a splash of oil, and sear the scallops on both sides to change their color repeat the same for monkfish.

Step 6: Now arrange all fish including prawns at the bottom and  layering if needed

Step 7. Take a saucepan melt the butter in it, and add the flour cook for a couple of minutes on medium heat, and pour the strained milk into the saucepan and stir it continuously until you get a thick sauce. Add cream to it and stir continuously.

Step 8:  Now remove the pan from heat and then carefully stir the eggs, parsley, and lemon juice check the seasoning, and then pour the mixture over the fish into the dish which we have kept aside before this step

Step 9. Half an hour before the servings, preheat the oven to gas 4/180C/ 350F

Step 10:  Put the dish into the preheated oven for around 25 to 30 minutes, and bake it until the pie turns golden brown and the filling starts bubbling.

Step 11: Preheat the grill for 10 min to serving

Step 12: Reheat the potatoes in the saucepan on medium heat and then spread it over the fish with white sauce, then place the dish of fish under the grill to get the proper color to the potatoes crumble the cheese, and then bake under the grill and serve immediately

Step 13: Serve the luxury fish pie a little warm along with fresh salad or green salad. Enjoy this indulge dish!
